When she saw something unexpected on her right side, she abruptly slowed down, almost stopping and I lost grip of the reins. In a split second I knew she would gallop off into the desert once she realized that what had startled her was nothing to fear. I made a decision to dismount sideways and landed on my shoulder. Instead, she waited for me as I lay there in excruciating pain. Nothing but desert surrounded. The sun was setting and it was a dreamlike real time moment of wonder, pain and reflection. She was the tallest horse I had ridden and I subconsciously doubted my ability to ride with her. Three and a half hours in and if I had trusted my ability, had confidence in my decision to ride her that day, I would have had tighter grip on the reins.

The thing about trust is that it is discovered through action. Therefore until we step out on faith within ourselves, we wouldn’t have the experience of bearing witness.

Recipe of the Week

Veggie Peanut Ramen

Flavorful and Savory.

Serving size: approximately 2 ppl

Ingredients:

Organic ramen noodles (1 pack), Bok choy (1 small ziplock bag filled), Diced fresh green onions (1/2 cup), Thinly shaved carrot (2 large), Peanut butter (3 thick tablespoons - creamy or chunky), Diced Garlic (3 medium cloves), Thinly sliced White onion (half of medium), Thinly sliced Bell Pepper (1 whole color of your choice), Soy Sauce (3 tablespoons), sesame oil (2 tablespoons), ginger, grated (1 thumb), Gojuchang (2 tablespoons), Miso paste (1 large tablespoon), Mirin, Coconut milk ( 1 can), ‘Not-chikin’ bouillon from Whole Foods (2 cubes) - or you can use regular bouillon cubes, 16 oz of water

Spices (Sea Salt, Black Pepper, Chili flakes)season to taste

Instructions:

  1. Bring pot of water to boil and put the bag of ramen in the pot. Monitor until al dente then remove, strain and rinse with cold water.

  2. While the noodles are boiling, prepare the vegetables (diced, sliced or grated as indicated above).

  3. Place sesame oil, ginger, half of the white onions and garlic into a pan. Cook on medium heat until they begin to slightly golden.

  4. Add coconut milk, soy sauce, mirin, gojuchang, miso paste, peanut butter and bouillon cubes to the pan. Add spices to your liking (salt, pepper etc.). Stir until it simmers into a beautiful golden color. After it has cooks down a bit, add the water. Cover and let it simmer.

  5. Add Bok choy, bell pepper, carrot and the other half of the fresh white onions to the soup. Let simmer for a minute or so until they have absorbed the soup flavors a bit.

  6. Place noodles into a bowl, use a ladle to pour soup with fresh veggies over the noodles, sprinkle green onion over top along with chili flakes.

  7. It will be hot! Be careful.
